- Chicken thigh…1 piece
- soy sauce … 1 tablespoon
- Mirin … 1 tablespoon
- Sake…1 tablespoon
- Garlic…a little bit
- Ginger… a little
- Salt and pepper…a little
- Sorghum flour…appropriate amount
- Fried oil…appropriate amount
Preparation
- Cut the chicken thighs into bite-sized pieces.
- Add all the seasonings and mix, then add the chicken thighs and let the flavors meld for about 30 minutes.
How to make
- Heat the oil to 170℃.
- Place the chicken thighs in a plastic bag containing sorghum flour and shake to coat evenly with the flour.
- Deep fry in oil.
*Sorghum flour burns more easily than wheat flour or potato starch, so setting the temperature lower than usual will result in a cleaner finish.
