  • Chicken thigh…1 piece
  • soy sauce … 1 tablespoon
  • Mirin … 1 tablespoon
  • Sake…1 tablespoon
  • Garlic…a little bit
  • Ginger… a little
  • Salt and pepper…a little
  • Sorghum flour…appropriate amount
  • Fried oil…appropriate amount

Preparation

  1. Cut the chicken thighs into bite-sized pieces.
  2. Add all the seasonings and mix, then add the chicken thighs and let the flavors meld for about 30 minutes.

How to make

  1. Heat the oil to 170℃.
  2. Place the chicken thighs in a plastic bag containing sorghum flour and shake to coat evenly with the flour.
  3. Deep fry in oil.

*Sorghum flour burns more easily than wheat flour or potato starch, so setting the temperature lower than usual will result in a cleaner finish.
